This past weekend I was lucky enough to make a birthday cake for a beautiful little girl's 2nd birthday! When her mom had asked her what kind of party she wanted, she replied with "pink and purple!". Now there is a little girl who has it figured out :)
For the cake we decided to go with layers of chocolate and vanilla, and fill it with a raspberry buttercream. I love the addition of fruity buttercream to cake.
The chocolate layers were actually Devil's Food Cake (always a favourite) from the cookbook Martha Stewart's Cupcakes and the vanilla layers were a Vanilla Bean Cake (recipe from mybakingaddiction.com).
For the raspberry buttercream I used the strawberry buttercream recipe and instead of strawberries I added 1/2 cup fresh raspberries to flavour and colour the icing. Right before filling the cake I then added another 1/2 cup and gave it a quick mix so that there would be tasty pieces of raspberry throughout.
My husband was kind enough to provide us with an action shot :)
The 8" and 6" cakes were stacked, filled, dirty iced, and covered in fondant. Then the fun really began! I tried to stick with the base colours requested in order to keep the birthday girl happy :)
I hoped she loved her cake! And had an absolutely wonderful 2nd birthday!
