Spicy Potato Pizza!



By far my favourite pizza in the whole world is the Spicy Perogy Pizza from a popular restaurant that got it's start in Edmonton. It is so delicous! I decided that I had to make my own version at home because I just couldnt justify ordering it every time a craving hit, I would never be able to afford my addiction that way!


We weren't sure what the best way to 'spice up' our potatoes would be, so we tried a couple different versions.
Method #1: Slice the potatoes and soak overnight in a water/hot sauce mixture
Method #2: Boil the potato slices in water with hot sauce added to the water
Method #3: Boil the potato slices in plain water, and brush on the hot sauce afterwards.


We then laid out the three different types of spicy potatoes on the pizza dough, and tried our best to remember which type we had placed where, and in what order.






The conclusion? Boiling the sliced potatoes in water with hot sauce in the water worked the best! The flavour and heat really infused itself into the slices that way, they were perfect!


Note: remove the potatoes from the boiling water before they are completely soft, the moisture in the pizza sauce and cheese will continue to soften the potato as the pizza is cooked in the oven.


For the dough, I used a recipe I found on thepioneerwoman.com, it was super easy, and really tasty.  She recommends making the dough a few days ahead of time, and I think that really helped with the texture.


For the pizza sauce, we mixed 2 parts sour cream with 1 part salsa, and spread that across the dough. 


Then we laid our various potato slices across the pizza sauce, only overlapping them enough to provide full coverage. If you like a ton of toppings, you might want to add mutliple layers of the potatoes.


The potatoes were then covered with shredded cheese (we used marble cheese because that is what we always have in the house, and the bit of cheddar goes really well with the potatoes), and on top of the cheese went the bacon pieces!


After the pizza is done cooking, remove from the oven, sprinkle with sliced green onion, and serve with sour cream!


YUM! This was so good! I almost didnt want to share, almost.



Spicy Potato Pizza

Dough
  • 1 tsp active dry yeast
  • 1 1/2 cups warm water
  • 4 cups flour
  • 1 tsp salt
  • 1/3 cups olive oil
    • Note: This dough recipe will make enough for 2 pizzas made on regular cookie sheets
Pizza Toppings for one Spicy Potato Pizza
  • 3 - 4 medium potatoes
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 to 2 cups shredded marble cheese
  • 3 green onions, sliced
  • 6 slices cooked bacon, chopped up
  1. Sprinkle the yeast over the warm water, and let sit for about 5 minutes
  2. Mix the flour and salt together, and then slowly add the olive oil until all three ingredients are just combined
  3. Add the water/yeast mixture to the flour, and combine
  4. Coat the inside of a mixing bowl with olive oil, put the ball of dough in the bowl, and roll around to coat. Cover the bowl with a lid or saran wrap, and place in the fridge overnight, or for up to 3 days.
  5. When ready to make the pizza, preheat oven to 500F and spread the dough out onto a greased baking sheet (there is enough for two pizzas, so you can make a second Spicy Potato Pizza, or another pizza of your choosing! At my house, the second pizza is always pepperoni and mushroom)
  6. Slice your potatoes, and boil in the water and hot sauce until they are just softened 
  7. Mix the salsa and sour cream together, and spread on the dough
  8. Top with the potatoes, and then cover that with the cheese and the bacon
  9. Bake in the oven for about 10 - 15 minutes, or until the edges are a beautiful golden brown
  10. Remove, and sprinkle the pizza with the chopped green onions
  11. Serve with sour cream, and fall in love!
