S'more Cupcakes


I saw this recipe for S'more Cupcakes over on bakerella.com one day, and they looked like too much fun to pass up! I mean, how can you go wrong when you put S'mores and cupcakes together in one tasty treat? Thats right, you can't. The link to the original post can be found here.


The bottom of the cupcakes is a graham cracker batter, the top is a chocolate batter, and in the middle is a marshmallow! And the whole thing is topped off with sugary graham crumbs, mmmm.


If you wish you can also top the whole thing off with chocolate ganache, and maybe even another piece of marshmallow. But as the blog name implies, i like my cupcakes best without any toppings, just nice and naked. I do know that most people prefer some icing of some sort, so I have included her chocolate ganache recipe as well for your reference. This recipe makes about 15 regular sized-cupcakes.


S'more Cupcakes

  • 1 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cup cocoa
  • 3/4 cup graham cracker crumbs
  • 1 cup milk
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup canola or vegetable oil
  • 6 large marshmallows (cut in half)
  • 1/2 cup brown sugar
  • 1/2 cup graham cracker crumbs
  • 1/4 cup (half a stick) melted butter
  1. Line standard muffin tins with paper liners, and set your oven to 350F.
  2. Mix the flour, sugar, baking powder, and the baking soda together in a large mixing bowl
  3. Put half of the flour mixture into a second bowl
  4. In the first bowl, add the cocoa and mix thoroughly
  5. In the second bowl, add the graham cracker crumbs and mix thoroughly
  6. In the bowl that contains the cocoa, add 1/2 cup milk, 1 egg, 1 tsp of the vanilla, and 1/4 cup of the oil and mix until combined
  7. In the bowl that contains the graham crumbs, add the remaining milk, egg, vanilla, and oil and mix until combined
  8. In a small bowl, mix the 1/2 cup brown sugar, 1/2 cup graham crumbs, and 1/4 cup melted butter to create the sugary graham crumbs. I found it easiest to mix with my hands after the mixture cooled a bit, this way I was able to obtain perfect graham sugar crumbs. The opportunity to lick my fingers clean after was a bonus as well!
  9. Fill each muffin cup about 1/3 of the way with the graham batter.
  10. Add some of the graham sugar crumbs, followed by half of a marshmallow.
  11. Cover the marshmallow completely with the chocolate batter (fill the muffin tin another 1/3 of the way) and then add the remaining graham sugar crumbs to the top of each cupcake
  12. Place on center rack, and bake for approximately 15 minutes
If you wish to top your cupcakes with chocolate ganache, here is the recipe:

Chocolate Ganache
  • 4 ounces semi-sweet chocolate
  • 1/2 cup heavy cream
  • 1/2 cup butter (one stick)
  1. Heat up the butter and the cream together on the stove in a small sauce pan
  2. Remove from heat when the mixture is about to boil, and pour it over the chocolate in a heat-proof bowl
  3. Stir the mixture until the chocolate is melted
  4. Pour the ganache over the cooled cupcakes and enjoy!
